FOREWORD Nutrition is one of the most important issues that are emphasized today. Today, millions of people in the world are constantly fighting death and diseases caused by hunger and malnutrition, while others lose their lives at an early age or become unable to work due to disorders caused by excessive and malnutrition. Thus, inadequate and unbalanced nutrition problems are among the leading factors that impair people's health. One of the causes of inadequate and unbalanced nutrition problems is the lack of nutritional information. Nutritional knowledge is one of the factors that affect the nutritional status and habits of individuals, families and societies. This factor is important in terms of nutrition of people of all ages and genders, especially children in the growing age who are most affected by inadequate and unbalanced nutrition problems, mothers who raise them, the elderly and individuals who are genetically predisposed to certain diseases. Therefore, one of the tools in the prevention of malnutrition problems is nutrition research and education. Personnel who will plan and manage nutrition research and education are trained in higher education institutions. In our country, Nutrition and Dietetics Departments of Health Sciences Faculties of Universities train staff working in nutrition education and research. In addition, nutrition courses are included in various curricula of universities related to medicine and health sciences. Medical faculties of universities have started to give more importance to nutrition in recent years. Nutrition courses are included in the food science and food engineering programs of vocational education and vocational non-formal education faculties, veterinary and agriculture faculties. There is hardly any nutrition book written in Turkish that will help in nutrition lessons taught in different scopes in many higher education programs. Although the metabolism-related issues of nutrition are included in the biochemistry and physiology books, the applied issues related to the improvement of the diet of the individual, family and society are not mentioned. The books taught in agriculture and veterinary faculties are generally about animal and plant nutrition. In this book, the theoretical and practical aspects of human nutrition are presented in a way that complements each other. The book is a textbook for the "Nutrition Principles and Nutrients" courses given by the nutrition and dietetics departments of universities with different codes and in different scopes. It is also a supplementary book for the nutrition courses in other higher education programs. In addition, the second and third sections of the book, in particular, are practical on nutrition issues. We believe that it can help anyone who wants to provide information and has at least secondary education. While this edition is being printed, the information in the book has been revised in the light of new research and publications and necessary changes have been made.
